It is best known as the traditional greasing agent for canelé bordelais molds, where it creates the characteristic lacquered, deeply caramelized crust and imparts a delicate honey note and extra crunch that butter alone cannot replicate.

It also works as a natural glazing and protective coating for pastries and confections, adding shine and a professional finish while respecting the integrity of the product. Supplied in 4 individual 20 g blocks for easy portioning and storage.
