Patis Decor Kappa carrageenan, plant-based gelling agent, 10 g

Kappa carrageenan is a plant-based gelling agent that gives a firm, brittle result. It is particularly suited to fruits that cannot be set with gelatine (pineapple, kiwi, papaya) and to milk-based desserts, as it stabilises milk proteins and many creams. Its gelling power is about eight times that of gelatine. It can be combined with other gums to modify texture and has excellent synergy with locust bean gum for a more cohesive texture with less syneresis. Obtained from red algae, carrageenans are natural, colourless, odourless and tasteless polysaccharides, a plant-based alternative to animal gelling agents.
